Whole Roasted Fish
1 white fish, such as red snapper or tilapia, butter flied
1 lemon thinly sliced
3 cloves garlic thinly sliced
¼ cup basil
1 teaspoon salt
½ teaspoon black pepper
2 tablespoon oil
Preheat oven to 475 degrees.
Stuff fish with lemon, thinly sliced garlic, basil.
Drizzle oil, salt, black pepper onto fish and top with remaining sliced garlic.
Roast for about 25 minutes, until skin is crispy

This chicken comes out very soft and goes really well with a couscous dish. Enjoy,
SWEET & SOUR CHICKEN
4 pieces of chicken (its best to use bottoms)
1 lg onion diced
paprika
black pepper
1/2 c ketchup
3/4 c brown sugar
1 Tablespoon brown sugar
1 Tablespoon soy sauce
3 cloves garlic, crushed
Preheat oven to 350.
Put onion on bottom of a 9 x 13 pan.
Skin the chicken and place on top of onions.
Sprinkle pepper and paprika over chicken.
Bake for 20 minutes uncovered.
Mix the remaining ingredients together
Pour over chicken.
Bake covered for 1 1/2 hours.
Serve over couscous of your choice.
