Winter is upon us and the cold nights are here for awhile.

Try this simple yet delicious soup to warm up. 

 

Soup- easy as 1-2-3. 

Tomato Soup 

3 cans tomato juice 

1 can water (used the empty can of juice) 

1/4 cup sugar 

salt,  Pepper to taste 

1/2 cup rice 

(optional: basil) 

Directions
 
Throw all ingredients in a pot (can double...) 

Bring to a boil 

Cover and simmer for 1/2 hour.


Zucchini Potato Soup

Ingredients: 

2 Onions

5 Potatoes  

2 Stalks Celery diced

5 Zucchini 

Oil 

Salt to taste 

Water.

Directions:  
Cut up and sauté the onions in a little bit of oil. Cut Celery and add to onions
Wash zucchini and remove top and bottom. 
Cut and peel zucchini (optional peeling) in medium pieces and add to sautéed onions 
Add Salt to taste 
Let it sauté for 5 minutes 
peel and cube potatoes and add water to cover all zucchini and potatoes.

For additional flavor add vegetable stock
Allow to come to a full boil 
Lower to a simmer for an hour 
Blend with a hand held blender

 

 

Mushroom Barley Soup 

(Spice & Spirit Cookbook)

 

 

I love this soup. It is easy to prepare and freeze. 
It is very filling so can be served with a protein for dinner. 

Oil for saute 
2 onions, chopped 
3 cloves garlic, minced 
1 lb mushroom ,sliced or 2 cans mushroom 
salt 
pepper 
4 Tablespoon sherry ( I use wine) 
3/4 cup barley 
7 cup water (or vegetable stock) 
4 Tablspoon soy sauce (tamari  preffered) 

Directions: 
In small pot, cook barley in 1 1/2 cups of the water (or stock), until tender 
While cooking: 
In a 3 qt pot saute onion and garlic in oil 
When transparent, add mushrooms, spices and sherry. 
Cook uncovered until mushrooms are soft 
Add barley, soy sauce, and remaining water to vegetables. 
Bring to a boil. 
Simmer for 1/2 hour.


DONE
